Dal Makhani is the essence of any North Indian meal. This medium spicy vegetarian dish with black beans and tomatoes packed in a thick richly spiced butter sauce, is cooked slowly to produce a perfect melting flavour. Ideal as a main course served with jeera pilaf (cumin rice), naan bread or chapatis.
