Recipe idea: Masala chicken curry

Serves 2.

Ingredients: 2 tablespoons vegetable oil 1 medium onion, diced 60g - 1/5 jar Patak's Garam Masala Curry Paste 250g diced chicken breast 200g fresh or chopped tinned tomatoes 2-3 fresh curry leaves (optional) 2 teaspoons fresh chopped coriander leaves (optional) 1/2 teaspoon coarsely ground black pepper Sugar to taste.

Method:

1. in a medium frying pan, lightly fry the onions in oil until golden.

2. Stir in Patak's Garam Masala Curry Paste, add tomatoes, sugar and half the chopped coriander. Mix well, add a little water if needed, cover the pan and simmer on low heat for 10 minutes.

Add the fish steaks and spoon over the sauce. Cover and cook on a low heat for a further 10-15 minutes.

Serve garnished with the remaining chopped coriander leaves and black pepper.

Tastes just as good with chicken, beef, lamb or vegetables.

Patak's curry pastes are refined blends of freshly ground spices and herbs, preserved in vegetable oil to retain their freshness. Mixed with yoghurt, they can be used as a marinade before cooking; cooked with onions and tomatoes, they make a delicious sauce for meat, poultry, sea fish or vegetables.

Patak's garam masala curry paste with cinnamon and ginger is probably only for friends of spicy exotic cuisine. It is added to meat dishes for seasoning; chicken or lamb is particularly popular for this mixture. Patak's curry pastes can simply be used by the tablespoon as a seasoning for meat skewers. This is an easy way to add a typically exotic flavour to your meat dishes. Best served with rice or bread.
