Preparation of dosa

Since the dough is ready, you can start preparing dosa right away.

Turn on the heat / flame over medium heat. Now you need a pan with a little ghee or sesame oil.
Fill the pan up to 3/4 level with the batter. Carefully place this batter in the center of the pan - like a pancake.
Now start to distribute the batter into a pancake in circular motions. Don't be concerned if the dosa develops tiny holes as you spread the batter. That is normal.
Once you've spread the batter on the pan, dip a brush in ghee or sesame oil and drizzle the oil over the entire surface of the dosa and around its edges as well. Now hold the pan by its handle, lift it up and turn it so that the dripped oil is distributed over the dosa.
When the top starts to look cooked (it won't look soft or runny anymore), flip the dosa over. At this point, the surface underneath should ideally be light gold. After converting, cook for 1 minute.
Take the dosa out of the pan.
